
One of my many versatile loaded salads. This one in particular is light yet filling. It is loaded with protein and antioxidants and could even be suitable for any vegan appetites!
- 1-2 Tomatoes
- Handful of Mushrooms
- 1 Can Sliced Beets
- 50/50 Salad Mix
- Chickpeas
- Trail Mix Blend ( I use: Pumpkin Seeds, Pistachios, Cranberries, Almonds)
I use Brianna’s Artichoke Dressing with a dash of Apple Cider Vinegar, but any dressing of your choice can be used here. Enjoy!
